Yep, a recipe for meatballs!
I know what you are thinking... "boring ole meatballs, I'm not reading this!"
You would be doing yourself and your family a disservice by not trying this recipe! Each meatball is like a mini meatloaf and who doesn't like meatloaf???
This has become one of my husbands most requested meals recently, pasta with meatballs, and I'm not sad about it!
I think the secret to these meatballs tasting so good is the Trader Joe's Soffritto Seasoning (have I mentioned this yet?? lol), so good. Also, dried minced onions - brings me back to childhood when I visited the Midwest and tried White Castle burgers for the first time, the onions make the burger!

Easy Gourmet Baked Meatballs
Ingredients
1 pound ground meat (beef, pork, turkey, chicken, veal, or a mix)
1 large egg
1/4 cup ketchup
1/2 cup fine, dry breadcrumbs
1/4 cup dried minced onions
1/2 teaspoon garlic powder
2 tablespoons Trader Joe’s Soffritto Seasoning
1 tablespoon Herbes de Provence
1/2 teaspoon red pepper flakes
2 teaspoons kosher salt
Freshly ground black pepper, to taste
Instructions
Preheat the oven to 400°F. Line a baking sheet with parchment paper or lightly grease it.
Mix the ingredients—In a large bowl, combine all ingredients. Use your hands or a fork to gently mix until just combined (don’t overwork the meat, or the meatballs may be dense).
Form the meatballs—Scoop and roll into evenly sized meatballs, about 1 to 1.5 inches in diameter. Arrange them on the prepared baking sheet.
Bake for 14 minutes or until the meatballs are cooked through (internal temp of 165°F for poultry, 160°F for beef/pork).
Serve & enjoy! Use them in pasta, sandwiches, or as a party appetizer with your favorite dipping sauce.
Pro Tip: Want a crispy exterior? Broil for 1-2 extra minutes at the end!
